For my contribution, I am sharing a recipe for a Candy Corn Layer Cake! First of all, you should know that there isn’t any actual candy corn involved. Instead, the cake is made with candy corn colors and is decorated with candy corn M&M’s. I love the bright colors of the cake and everyone I shared the cake with said it was so good. I guess I can consider it another practice cake in preparation for making that wedding cake!
This candy corn layer cake was really easy to make. The thing that I had the hardest time with was getting the candy corn M&M’s to stick in the frosting! It works best to put the candy corn M&M’s on the cake while the frosting is still soft. I frosted the cake and then went to pick up my kids from school. When I got home, the frosting was set and the M&M’s kept falling off. So, I put some of the extra frosting on the M&M’s that fell off and reattached them.
To make the cake, start by mixing one white cake mix with the ingredients called for on the box. Divide the cake batter into three separate bowls. Tint one of the bowls of cake batter orange, another one yellow and leave the third white. Pour into three greased 8 inch or 9 inch pans. Bake at 350 degrees for 15-20 minutes or until a toothpick comes out clean.
I used them same buttercream frosting that I used for this Cadbury Mini Eggs Layer Cake. To make the frosting, beat butter, shortening and vanilla until creamy. Add powdered sugar, 1 cup at a time, beating after each cup. Beat in 1/2 cup heavy cream until light and fluffy. If necessary, add additional heavy cream, 1 tablespoon at a time until it is the consistency you want.
Once the cakes have cooled completely, spread a little frosting in the center of the your cake platter and place the yellow cake on the frosting. Spread about 2/3 cup of buttercream between the yellow layer. Do the same for the orange and then white layers. Cover the entire cake with a thin layer of frosting, making a crumb coat which will seal the crumbs in place.
Once the crumb coat frosting is dry to the touch, frost the cake with the remaining buttercream frosting. (If you want more step-by-step pictures of how to frost the cake, check out this cake post.) Press Candy Corn M&M’s into the buttercream frosting, making a pattern. When you slice into the cake, you can see all of the delicious layers! Serve this at a fall party and everyone will love it!
