This Raspberry Parmesan Chicken Salad recipe features baby spring mix, chicken, Parmesan, olives, raspberries, and raspberry vinaigrette.
This raspberry salad combines flavors and textures that work so well together. I like to top it with raspberry vinaigrette, but you could also use poppy seed dressing or lemon vinaigrette.

I love having salads for lunch, and one of my current favorites is fresh salad greens with raspberries, parmesan, black olives, and chicken! My love for this salad started with my aunt.
A few times a year, she has my mom and all of my sisters over for lunch. For one of our spring lunches, she made chicken in a raspberry sauce that she served on top of a salad. I can’t remember everything that was in the salad, but I think there were sliced strawberries, cheese, and croutons.
Anyway, I love having fresh fruit on my salad, so I decided to make my own version at home.
How To Make Raspberry Parmesan Chicken Salad
This salad starts with a bowl of your favorite lettuce. I used a baby spring mix because I like the flavors and colors.
Add some cooked chicken. I used a rotisserie chicken because it is so easy! Air fryer chicken is another easy option.
Drizzle with light raspberry vinaigrette. I used a store-bought, but you can make your own if you prefer. Or go ahead and use any of your favorite salad dressings.
Next, add a few black olives.
And some shaved Parmesan. You can also use freshly shredded or grated Parmesan.
Top it all with plump, juicy raspberries. I’ve also made this salad with strawberries, and I love it that way too. Walnuts and pecans are a great way to add protein and crunch to this Raspberry Parmesan Chicken Salad!

Raspberry Parmesan Chicken Salad
Ingredients
- 2 cups baby spring mix lettuce
- 4 ounces cooked, sliced chicken
- ¼ cup black olives
- ¼ cup raspberries
- 1 tablespoon shaved parmesan
- 2 tablespoon raspberry vinaigrette
Instructions
- Put a large handful or two of lettuce in a bowl.
- Top with cooked, sliced chicken.
- Add black olives, Parmesan and raspberries.
- Drizzle with raspberry vinaigrette.
