I try to meet up with girlfriends once a week to go swimming. Sometimes our kids come with us and other times just the ladies go, but we always have a great time. We go later in the evening, after homework is done and after we’ve eaten dinner.
So, on our swimming day, I really need to plan ahead and have the ingredients on hand for an easy dinner. This past week, I made oven roasted pork chops with baby red potatoes, carrots and Campbell’s® Classic Roasted Chicken Oven Sauce.
Scrub and rinse baby red potatoes and cut them into quarters. Place the quartered potatoes in a microwave safe bowl and cover them with water.
Cook the potatoes in the microwave for 10 minutes on high.
While the potatoes are cooking, place four pork chops in a greased 9×13 inch pan. Coat both sides with a pork rub.
If you don’t have a pork rub in your pantry, you can easily make your own with a mixture of paprika, garlic powder, kosher salt, chili powder and freshly ground black pepper.
Place the hot potatoes around the pork chops.
Add carrots to the potatoes.
Pour a package of Campbell’s® Classic Roasted Chicken Oven Sauce over everything and spread it out evenly.

Bake the pork chops, potatoes and carrots at 400 degrees for 45 minutes, or until the pork is cooked and the vegetables are tender.

Oven Roasted Pork Chops
Ingredients
- 4 pork chops
- 1 1/2 lbs baby red potatoes
- 1 cup carrots
- 12 ounce package Campbell’s® Classic Roasted Chicken Oven Sauce
- 1 teaspoon pork rub
Instructions

For a super quick and easy dinner, this was pretty good! Of course, this sauce would be great on chicken as well, although I have only tried it this way. This is a great family meal when you are too tired to cook and just want something quick to prep.

Great info, just learning how to serious cook, at 74, wife can no longer stand,to cook. So, my meager attempts during our lives to cook have become challenged. Pork chops a favorite. This looks great, sounds fairly easy. Can I pan sear the chops to get abrown look to them, or do they really get brown enough during baking? Thanks

Hi Lori,
I would suggest substituting it with a can of cream of chicken soup. There is about 2 oz less in the can of soup so you could add 1/4 cup of liquid (chicken broth, water or milk) to it if you want.

Dang it I wish I would have read this question and answer sooner. I went ahead and seasoned the chops like I usually do (pepper, seasoning salt, rhyme and marjoram + I decided to add a little brown sugar–because why not?!) then I added pepper and garlic salt to the potatoes quarters before putting them in with the chops. Finally I topped everything with Lawry’s steak & chop marinade. I’m not feel very confident that this is going to turn out tasting very good!

The photo of this looks absolutely delicious & I thought I’d give it a try. That is until I checked a little bit farther and discovered that the sodium content of this particular sauce is 700mg per 1/4 cup! I have hypertension and that’s nearly half of the recommended amount for an entire day for me in just the sauce, nevermind the rest of the ingredients, or the other meals I need to eat during the day!!!
I have seen these sauces as well as other brands in the grocery store, I’ve had coupons for them. Each time I’ve decided to give one a try, I check the sodium content, put it back on the shelf, and leave the coupon for someone else. It’s too bad, they look so convenient and delicious but I’m afraid I’d end up in the emergency room with my blood pressure through the roof if I used any of them!

I’d make my own sauce with flour browned in a cast iron skillet. Add seasoningbto taste with non salt ingredients. Some water and low sodium beef broth to make a gravy. Pour over the vegetables and pork chops. That would fix the salt content hopefully.

You can always use products with no salt or make your own sauce! Use the juices from the pork chops and put a bit of cornstarch and boom! Gravy is some!
