Have you heard that November is National Bread Month and this year marks the 250th anniversary of the sandwich? We use a lot of bread in our family! Each day eight slices are used to make sandwiches for bagged lunches. Brian takes either ham and cheese or peanut butter sandwiches. Christine likes turkey and cheese. Vanessa and Zack take peanut butter and jelly every.single.day!! On many days, more slices of bread are used for breakfast toast and grilled cheese sandwiches are a dinner favorite. Recently my husband decide to make a grilled cheese sandwich and add some scrambled eggs and bacon to it! We’ve had it several times since then so I thought I would share these sandwiches with you.
Start by making scrambled eggs. You need about one egg per sandwich. I put the eggs in a bowl, add a little water, some salt and some pepper. Then, I whip it a little with a fork.
Next, heat up some ready to eat bacon. I buy it in the large packages from the warehouse stores and it makes the life of a bacon lover so much easier!
Spread butter on one side of each slice of bread.
Heat the pan to a low temperature (3-4) and place one slice of bread, buttered side down on the pan. Top it with a slice of cheese.
Put slices of bacon on top of the cheese.
Add the scrambled eggs next. Top with another slice of cheese if desired.
Finally add the second slice of bread, buttered side up.
Once the bottom is a golden brown, carefully flip the sandwich to brown the other side.
Sandwiches are an easy and convenient way to make a healthy meal for a family. Whether your family prefers whole grain bread or enriched bread, they are both a good source of vitamins, nutrients and complex carbohydrates. The Dietary Guidelines for Americans recommend eating six one ounce servings of grain foods each day. Grain-based foods like bread, buns, bagels, tortillas and crackers are not only healthy, they’re convenient and affordable!
