This Thanksgiving Pizza recipe is the BEST way to eat Thanksgiving leftovers. It has turkey, mashed potatoes, stuffing and more all in a puff pastry crust!
Have you started making your Thanksgiving plans yet? We will be spending this Thanksgiving at my sister’s house. Since both Brian and I have family living in the Minneapolis area, we take turns spending Thanksgiving with each of the families.
It’s hard because we would love to be with both families every year, but that isn’t possible, so we take turns. There are going be about 50 people at our Thanksgiving dinner this year and I can’t wait. It’s all the yummy food, the special people and the feeling of thankfulness that makes it so awesome.
Speaking of the food, although it is fabulous on Thanksgiving Day, I enjoy the leftovers just as much. Today’s recipe for Thanksgiving Pizza is the perfect thing to make with all of the Thanksgiving leftovers!

How To Make A Thanksgiving Pizza
Making this Thanksgiving Pizza is super easy. Start with a thawed puff pastry sheet. I used Pepperidge Farms and thawed the sheet on a lightly floured surface for about 45 minutes.
Then, gently press the puff pastry sheet into a greased 9-inch tart pan or pie pan. Trim the corners and use them to fill in any empty spaces.
Next, add your Thanksgiving leftovers. Don’t crowd the edges with too much food so that way, the puff pastry can puff up while baking.
First, spread mashed potatoes over the bottom and drizzle with a couple tablespoons of gravy. Next, sprinkle on some corn and green bean casserole.
Top that with leftover turkey, stuffing and another drizzle of gravy. Finally, sprinkle with shredded cheddar cheese before baking.
Bake at 400 degrees for 20 minutes. Sprinkle the top with French fried onions and baked for an additional 3-5 minutes. Garnish with a little basil, parsley or thyme and some freshly ground black pepper. Remove the sides of the tart pan before serving.
The awesome thing about this Thanksgiving Pizza is that you can use whatever leftovers you have from your holiday dinner. Got some leftover ham? Dice it up and sprinkle it on. You can add creamed corn, cooked carrots, and squash too!
Don’t have any leftover turkey? Try some rotisserie chicken. Try to keep the total amount of leftovers on the pizza to about 2 to 2-1/2 cups.
Thanksgiving Pizza
Ingredients
- 1 puff pastry sheet thawed according to the instructions on the package
- 1/2 cup mashed potatoes
- 5 tablespoon gravy , divided
- 1/4 cup corn
- 1/4 cup green bean casserole
- 1/2 cup chopped turkey
- 1/2 cup stuffing
- 1/2 cup shredded cheddar cheese
- 1/4 cup French fried onions
- 1/4 teaspoon freshly ground black pepper
- Basil parsley, or thyme, for garnish
Instructions
- Preheat oven to 400 degrees.
- Gently press puff pastry sheet into a greased 9-inch tart pan (or use a 9-inch pie pan). Trim the corners and use them into fill in any empty spaces along the sides of the pan.
- Spread the mashed potatoes over the bottom and drizzle with two tablespoons of gravy.
- Sprinkle with corn and green bean casserole.
- Top with turkey, stuffing, and three tablespoons of gravy.
- Sprinkle with shredded cheddar cheese.
- Bake at 400 degrees for 18-20 minutes.
- Sprinkle with French fried onions and bake for an additional 3-5 minutes.
- Garnish with basil, parsley or thyme and freshly ground black pepper.

Hi Tonia! It’s just the two of us as all the kids flew the coop years ago and are scattered all over the US, but I still make a full Thanksgiving spread! We LOVE leftovers! I make a take on shepherds pie that we call “squish”. I layer in turkey, vegetables, gravy and top it with mashed potatoes in a baking dish. Of course I always make stock with the carcass (there should be a better word for that!) for soup.
