White Chocolate Cranberry Cookies are a combo of sweet and tart. They’re perfect for Christmas, and you can even turn them into bars!
Cranberry and white chocolate are the perfect pair! They taste great together, and the white chocolate chips offset the dark red cranberries. If you like Starbucks Cranberry Bliss Bars, you’ll love these cranberry white chocolate chip cookies.
How To Make White Chocolate Cranberry Cookies
Beat the butter and shortening until combined. Add the sugars and beat until light and fluffy.
Then, stir in the egg and vanilla extract.
Add the flour, cheesecake-flavored JELLO pudding mix, baking soda, and salt. Stir to combine.
The cheesecake pudding mix adds flavor to these cookies! You can substitute it with 1/4 cup of flour if you want, but keep in mind the flavor and texture may be different.
Finally, stir in the white chocolate chips and chopped Craisin dried cranberries. Please note that fresh cranberries will not work in this recipe. They have too much liquid and are quite bitter and tart.
Use a #40 dough scoop (about two tablespoons) to make nine balls of cookie dough. Place them on a parchment-covered baking sheet with at least two inches between them. Use the bottom of a glass to flatten the balls of dough slightly.
Bake at 350˚F for 8-10 minutes. Drizzle with melted white chocolate and sprinkle with chopped dried cranberries.
