Two Ingredient Dough Soft Pretzels are SO EASY to make without yeast! Mix the dough, form the pretzels, dip in baking soda, and bake.
Everyone loves getting soft pretzels with cheese dip from the mall and food vendors! Did you realize that you can make your own at home using two ingredient dough? My family enjoys these soft pretzels for snacks and when getting together with friends.
How To Make Two Ingredient Dough Soft Pretzels
Put the self-rising flour and plain, nonfat Greek yogurt (I recommend using Chobani or Fage) in the bowl of a stand mixer with the attachment meant for mixing dough.
Homemade Self-Rising Flour
For one cup of self-rising flour, whisk together one cup of all-purpose flour, 1 1/2 teaspoons of baking powder, and 1/4 teaspoon of salt. Please note that this blog post was made using store-bought self-rising flour. If you choose to make your own, your results may vary, and you may have to make adjustments.
Mix at a low speed until combined. Then, knead at medium speed for about 3 minutes. After three minutes, a ball of dough should’ve formed. You can also use a hand mixer or even a wooden spoon to mix the dough.
If your dough is too sticky or wet, knead in a little more flour at a time until it is workable.
- Turn the dough out onto a floured surface and sprinkle with additional flour. Knead the dough a couple of times and form it into a flat ball.
- Cut the dough into six equal wedges.
- Roll each piece of dough into a long rope about 20 inches long. Or, if you prefer pretzel bites, you can cut the dough rope into small segments.
- Form the dough rope into a pretzel shape. Press firmly on the places where the dough rope intersects to hold the shape in place.
Dissolve baking soda in boiling water. Dip the soft pretzel into the baking soda mixture. You can also brush the baking soda mixture onto the soft pretzels with a pastry brush. Another option is to put the baking soda mixture into a clean spray bottle and spray it onto the pretzels.
What is the purpose of the baking soda bath?
The reason for dipping the soft pretzel dough into the baking soda bath is to give it a golden, crunchy exterior and that distinctive soft pretzel flavor.
Place coated soft pretzels on a parchment-covered baking sheet.
Bake at 425˚F for 7-10 minutes, until golden brown. Then, brush pretzel bites with melted butter.
Soft Pretzel Toppings
Sprinkle with pretzel salt, or you can use another coarse salt like kosher or sea salt. If you don’t want to use salt, try everything bagel seasoning, garlic, parmesan, ranch seasoning, or cinnamon sugar.
Make Ahead and Storage
- Make Ahead: You can make the dough ahead of time and store it in the fridge for up to 24 hours.
- Storage: Store the soft pretzels in an airtight ziptop bag or storage container for 3-4 days at room temperature.
- Freezer: For longer storage, put them in a freezer-safe airtight bag or container for up to four weeks.
Wait…why are there more than two ingredients?
The title of this blog post is Two Ingredient DOUGH Soft Pretzels which is to say that you are making soft pretzels using two ingredient dough. This is NOT a two-ingredient soft pretzel recipe which is basically impossible since just the pretzels, butter, and salt alone make three ingredients.
When I first heard about two-ingredient dough, I did a little eye roll at the name because although they technically only have two ingredients, one of the ingredients is self-rising flour, which is a combination of flour, baking powder, and salt, making it three ingredients.
Then, when making pretzels, you need to dip them in the baking soda bath for a crustier, golden top, which is another ingredient. And, of course, they don’t taste like much without the butter and salt, so that brings the ingredient list up even more.
But in the end, I decided I didn’t really care about the exact number of ingredients. These delicious soft pretzels are so easy to make, and there is no waiting for the dough to rise. I’m going to keep making them, no matter what they are called!

- Roll each piece of dough into a long rope and form into a pretzel shape. Press firmly on the places where the pretzel dough intersects.
- Dissolve baking soda in boiling water. Dip the pretzels into the baking soda mixture. Place on a parchment covered baking sheet.
- Bake at 425˚F for 7-10 minutes, until golden brown.
- Brush with melted butter and sprinkle with pretzel salt.
