- Broccoli: We used fresh, steam-in-the-bag broccoli and cooked it in the microwave. You can also use frozen broccoli, a head of broccoli, or precut broccoli.
- Rice: For the rice, you can use store-bought, ready-made rice or instant rice. Or if you have enough time, make long grain rice ahead of time.
There are four steps to making this easy chicken broccoli rice casserole. Mix together the sauce, stir in fillings, sprinkle on the topping, and bake until bubbly.
- Sauce: Prepare the creamy sauce by beating the cream cheese until smooth and then add the cream of chicken soup, milk, chicken broth, onion powder, garlic powder, salt, and pepper.

Ingredients
- 8 oz block cream cheese softened
- (2) 10 ½ oz cans condensed cream of chicken soup
- 1 cup whole milk
- ½ cup chicken broth
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon coarse ground black pepper
- 1 teaspoon kosher salt
- 4 cups broccoli florets steamed
- 2 cups diced cooked chicken
- 2 cups cooked rice
- 1 ½ cups shredded sharp cheddar cheese divided
- 1 cup crushed Ritz crackers
- ¼ cup butter melted
Instructions
- Beat the softened cream cheese. Add the cream of chicken soup, milk, chicken broth, onion powder, garlic powder, black pepper, and kosher salt.
- Stir in the steamed broccoli, diced chicken, cooked rice, and 1 cup of shredded cheddar cheese.
- Spread the mixture in a greased 9×13-inch casserole dish. Top with the remaining 1/2 cup of shredded cheddar cheese.
- Mix the crushed Ritz crackers and melted butter together and sprinkle over the casserole.
- Bake at 350˚F for 25-30 minutes, until the filling is bubbly and the casserole is golden brown on top.
