Melt together 1 cup white chocolate chips and 1 tablespoons of shortening in a double boiler. Here is my fancy double boiler. It is a shallow, glass bowl over a pot with a little simmering water in it.
Insert a toothpick in the top of the strawberry and double check that it is dry. Holding onto the toothpick, twirl the strawberry in the melted chocolate.
Allow any excess chocolate to drip off of the strawberry. Gently tap on the arm that is holding the strawberry, with the opposite hand, to help get the chocolate to drip. You don’t want to shake the chocolate covered strawberry too much because it will slide right off the toothpick!
Line the dipped strawberries on a piece of waxed paper. In this picture, you can tell that the first coat of chocolate doesn’t give good enough coverage. You can still see the seeds. So, after the first chocolate coating hardens, dip the strawberries into the chocolate again. The chocolate will need to be softened again before the second dipping. Melt together more chocolate and shortening, if needed.
Put the strawberries back on the waxed paper and allow the white chocolate to harden before moving them to a serving platter. These are best enjoyed immediately so leave yourself a little extra time on Valentine’s Day to make them!

I used corn on the cob holders instead of toothpicks! Much easier and sturdier to handle the dipping process.
