Pecan pie bars have a shortbread crust with a pecan pie like topping! This recipe works great for the holidays or even for bake sales.
My very favorite holiday pie is pecan pie! When I was a kid, my cousin convinced me to try a bite of the pecan pie that her mom had brought to the Thanksgiving dinner. Since she loved it so much, that I tried a bite and I’ve loved it ever since.
Once I got married, I asked my aunt for her recipe and found that it is actually her mom’s recipe. Now, my husband and kids love it when I make pecan pie and our families request it for holiday meals. So, I decided to try making some pecan pie bars to share with you.

How To Make Pecan Pie Bars
Step One:
To make the pecan pie bars, mix together flour and brown sugar in a bowl. Cut in butter until the mixture is crumbly.
Pat into a greased 9-inch pan. Bake at 350 degrees for 15-20 minutes.
Step Two:
Remove from the oven and top with caramel ice cream topping.
Then, in a small bowl, whisk together eggs, brown sugar, flour, vanilla, salt, and baking soda. Stir in chopped pecans.
Return to the oven and bake at 350 for 20-25 minutes or until set.
Allow the bars to cool and cut into squares. My kids and my nieces and nephews were a little skeptical of these bars but really wanted to try them. They all ended up loving them. The crust is like shortbread, the middle is sweet and gooey and the pecans are crunchy. It’s a delicious combination!

Pecan Pie Bars Recipe
Ingredients
Shortbread Crust:
- 1 ¼ cups flour
- ½ cup brown sugar
- ½ cup butter cold
Pecan Pie Layer:
- ⅓ cup caramel ice cream topping
- 2 large eggs
- ½ cup brown sugar
- 2 tablespoon flour
- 1 teaspoon vanilla
- ⅛ teaspoon salt
- ⅛ teaspoon baking soda
- 1 cup pecans chopped
