Ingredients Needed
- White Chocolate Chips: Provides structure so that the fudge will hold its shape.
- Green Frosting: You can buy it green or tint vanilla frosting with food coloring.
- Mint Extract: Add flavor to the fudge.
- Mint Oreos: Add small crumbs to the fudge and large pieces on top.
- Andes Baking Chips: Adds more flavor and texture.
How To Make Chocolate Mint Fudge
Start by roughly chopping four mint Oreos and finely chopping another four mint Oreos. I used a chef’s knife for the rough chopping and a food processor for the fine chopping.
Melt two cups of white chocolate chips in the microwave and stir until smooth.
Mix half a teaspoon of peppermint extract into a 15.6-ounce container of green frosting, or you can add green food coloring to a container of white frosting.
Scrape the frosting into the bowl with the melted white chocolate chips. Add the finely chopped mint Oreos and stir until combined.
Spread the mixture into a greased, foil-lined 8-inch square pan.
Sprinkle with the roughly chopped mint Oreos and Andes Creme de Menthe Baking Chips and press them into the fudge.
Allow the fudge to set, and then use the foil to lift the fudge from the pan and cut it into pieces.
Storage
- Pantry: Store the mint chocolate fudge in an airtight container at room temperature for 3-4 days.
- Fridge: You can store it in the fridge for 5-7 days in an airtight container.
- Freezer: To freeze the fudge, place it in a freezer-safe, airtight container with parchment paper between layers. Freeze for up to four weeks.
It actually looks like chocolate mint ice cream cut into bars. My son said that he really likes the mint Oreo pieces in the fudge because they add some crunch. He explained how some fudge is too smooth, too much of the same texture, and that the Oreos and Andes bits make this fudge so delicious.
