Can you believe that we are talking back-to-school already? It seems like we waited so long for summer vacation to arrive and now it is almost over. My kids have been asking when they are going to find out which teachers they have and they are excited to go shopping for new clothes and school supplies. Once of the nice things about starting school is that we get back into a routine. Everything from bedtime to mealtime is on more of a schedule. I think that it is very important for everyone to eat breakfast before starting their day and I think it is even more important for kids. We are in the middle of a 10 day American Egg Board Challenge to eat eggs for breakfast instead of cereal. My girls love eggs and were delighted when I said that we were joining this challenge! Eating eggs for breakfast gives my kids vitamins, minerals and protein without the sugar that is in cereal. They feel full longer which means they don’t eat as many snacks.
So far this week, we‘ve had scrambled eggs, over easy eggs, omelets and Easy Flatbread Breakfast Pizza
The ingredients for making Easy Flatbread Breakfast Pizza are simple: flatbread, eggs, milk, sausage and shredded cheese.

Beat 1 egg and 1 tablespoon of milk in a microwave safe 2 cup cereal bowl that has been greased with cooking spray.
Add 2 tablespoons of fully cooked sausage crumbles and sprinkle with salt and pepper, if desired.
Microwave on high for 30 seconds. Push the cooked eggs towards the center and then return to the microwave for an additional 15-45 second longer until eggs are almost set.
Arrange eggs on a piece of flatbread and sprinkle with 2 tablespoons of shredded cheese.
Return to the microwave for an additional 10-15 seconds to melt the cheese.
We really enjoyed the breakfast pizza and will definitely be making it again! I like to serve my kids eggs for breakfast instead of cereal because eggs are so much better for them. The amount of sugar in a bowl of cereal with milk is astounding. It is about the same amount of sugar as there is in a candy bar! On the other hand, I really like that one egg has less than 1 gram of sugar! And 82% of parents agree that eggs are a more nutritious breakfast then cereal, according to a recent survey conducted by the American Egg Board!
Research also shows that eating a protein rich breakfast such as an egg breakfast, improves appetite control and leads to increased feelings of fullness. This makes it easier for children to focus and learn in school! I’ve noticed that eating eggs for breakfast leads to less snacking between meals which is another health benefit for my children.
Eggs are all natural and are filled with essential vitamins, minerals and six grams of high quality protein. They are a perfect breakfast to give kids the energy they need for busy school days because they can be prepared in a number of ways. That is important to me because no one wants to eat the same thing day after day!
