With Easter just around the corner, I’ve been thinking about Easter dinner with ham and all the trimmings which is always delicious but the highlight of these family dinners is the dessert. We usually have pie at our holiday meals so I decided to try to make my very first key lime pie.
I am all about finding easy, yet delicious desserts so I made this Easy Key Lime Pie with COOL WHIP Whipped Topping as one of the main ingredients!
Whisk lime gelatin into boiling water and stir until dissolved. Then, add the key lime or lime juice (fresh squeezed or bottled). Once the gelatin mixture has cooled, add the key lime pie yogurt.
Add one container of COOL WHIP and green food coloring, if desired. The food coloring was the last thing I added because after mixing everything together, I realized that I wanted to make the green more noticeable.
Spoon mixture into graham cracker crust and smooth out. Place in the refrigerator to set for at least 2 hours.
To make a lime curl, I cut a slice of a lime and then cut off the green part of the peel. The peel didn’t want to stay curled up so I twisted it around a pencil and let it sit while pie was setting.
Put slices of pie onto plates, top with a dollop of COOL WHIP from the second container and add the lime curl.
My husband has always been a huge key lime fan, but I had never tried key lime pie until last Christmas at my in-laws. I really enjoyed it and have wanted to try making my own.
This recipe was easy to make and I am so happy with the results. Now, I want to try this same recipe using various flavors of gelatin and yogurt! Just picture trying strawberry, lemon, raspberry or cherry.
It would even be fun to mix the gelatin and yogurt flavors by making a raspberry/lime pie or strawberry/lemon pie which would probably taste like strawberry lemonade!
Easy Key Lime Pie
Ingredients
- ¼ cup water boiling
- .3 oz sugar free lime flavored gelatin
- 2 teaspoon key lime juice fresh squeezed or bottled
- 12 oz light key lime pie flavored yogurt
- 8 oz COOL WHIP Whipped Topping
- 1 prepared graham cracker crust
- green food coloring optional
- 8 tablespoon whipped topping
- lime optional
Instructions
- Whisk lime gelatin into boiling water and stir until dissolved.
- Add the key lime juice.
- Once the gelatin mixture has cooled, add the key lime pie yogurt.
- Add a 8oz container of COOL WHIP and green food coloring, if desired.
- Spoon mixture into graham cracker crust and smooth out.
- Place in the refrigerator to set for at least 2 hours.
- To make a lime curl, cut a thin slice of a lime and then cut off the green part of the peel. Twist the slice around a pencil and let it dry while the pie is chilling.
- Put slices of pie onto plates, top each slice with a tablespoon of COOL WHIP and a lime curl.

. Easier yet. Use 2 -6oz containers of lime yogurt.. Fold the yogurt into 8oz container of
coolwhip. Place in Graham cracker or shortbread crust and freeze. Delicious and so simple.
Use any flavor of yogurt. My favorite is raspberry.

I do not use key lime juice. I use key lime yogurt and key lime jello. We have this or a xvariation frequently.

This is an even easier recipe:
Key Lime Pie
8 oz package cream cheese
14 oz tin condensed milk
2 tspns vanilla
½ cup lime juice
Graham cracker crust
Beat cheese in medium bowl til creamy. Gradually beat in condensed milk, beat until smooth. Add vanilla and lime juice and blend thoroughly. Pour mixture into pie shell, cover and refrigerate at least six hours before cutting.

Been making this for years, lately because I like TART, made it using just the lime juice in place of the water. PUCKER UP! Also because of a friend that likes frozen desserts, I freeze it when dining with him.

Real key lime pie is Never green. It should be faintly yellow, if colored at all. Leave out the food coloring.

In the pictures, you use sugar free jello and lite yogurt. I hate the taste of artificial sweetener. Can I use regular ingredients?

This pie sounds very easy and delicious. Why not eliminate the botted lime juice, and squeese the 2 tsp. of lime juice (which is required to make the pie) from the real lime which you’ll use to make the lime curls? This would be more cost effective, don’t you think so?

I make this using a small box of jello a small container of yogurt and an 8 oz container of col whip mix by hand put in 9in graham cracker crust and chill for about 2 hrs.

Just wanted to make sure Im reading the recipe right, In the ingredient list it calls for 2 8 oz containers of Cool Whip, but in the directions it says to use a container of Cool Whip. Is the second Cool Whip for topping or is that a typo?
