When I was growing up, my family loved eggs. My mom would make a skillet full of scrambled eggs or a pan of easy over eggs for breakfast on weekends. On weekdays, my dad, who left the house before the rest of us got up, would make himself bacon and eggs before leaving for work. One of my youngest sisters wanted eggs for breakfast every day! My mom would ask her what she wanted for breakfast and she would say, “Uggs!” (meaning eggs)!
Now I have a family of my own and they love eggs as well. We all have our favorites. Brian’s favorite way to eat eggs is an omelet. My favorite is scrambled with bacon, peppers and potatoes. Christine loves easy over eggs on toast and Vanessa really likes the Microwave Egg and Sausage Breakfast Taco that we made during the American Egg Board 10-Day Challenge. So, I taught her how to make breakfast tacos so that she can have them for breakfast whenever she wants.
The ingredients are basic: an egg, milk, salt, pepper, sausage, shredded cheese, soft taco shell and salsa.
Mix the egg and milk in a cereal bowl with a fork. Add salt, pepper and sausage before microwaving for 30 seconds. Move the cooked eggs into the center of the bowl and then return to the microwave for another 30 seconds. Put the eggs on a soft taco shell and sprinkle with shredded cheese. Microwave for a few seconds to melt the cheese, if desired, and then add salsa.
