This Mini Fruit Pizza recipe is so easy to make with store-bought shortbread cookies. It is less messy to eat than the traditional version, and it’s easy to serve at summer celebrations, from a bridal shower to a backyard cookout.

How To Make Mini Fruit Pizza
Step One: Make The Cream Cheese Frosting
To make the cream cheese frosting, beat the softened cream cheese until smooth. Add the thawed Cool Whip and beat until smooth. Then, stir in the powdered sugar and vanilla.
To make things super easy, I used Sandies Shortbread Cookies, but you can also make homemade sugar cookies or shortbread cookies if you prefer. Spread one tablespoon of the frosting on each cookie.
Step Two: Slice The Fruit
For the fruit, I used mandarin oranges, kiwis, strawberries, and blackberries. Cut the larger pieces of fruit into smaller pieces and leave the larger one whole.
Step Three: Top Shortbread Cookies
Top each cookie with a combination of fruit. Another fun option would be to frost the shortbread and then allow guests to add their own favorite fruit toppings. Just cut all of the fruit up and put it on the serving table in small glass bowls.
You can make this dessert the night before. The shortbread cookies will soften overnight, so store them in the fridge until ready to serve.
Make Ahead and Storage
- Make Ahead: If you plan to serve mini fruit pizzas within 24 hours, you can make them ahead of time. Otherwise, you can make the frosting and dice the fruit, but wait to assemble the cookies.
- Refrigerator: Store them in an airtight container in the fridge for up to two days.
- Freezer: We do not recommend freezing mini fruit pizzas.

Ingredients

I have made these a few times now and everyone has loved them. I always end up having way too much frosting left over so this last time I got two packages of the Sandie’s Shortbread Cookies which made approx. 40 and I still had a little bit of frosting left 🙂 But still a great recipe with a lot if compliments!
