This Puff Pastry Breakfast Pizza has a light, flaky crust topped with cheese sauce, scrambled eggs, cheddar cheese, and bacon!
This is the ultimate breakfast pizza and is easy to prepare with puff pastry for the crust. Several years ago I shared a recipe for Thanksgiving Pizza with a puff pastry crust topped with Thanksgiving dinner leftovers. We love that recipe so much that I had to try making a breakfast version.
Start with a thawed sheet of puff pastry. Gently press the puff pastry sheet into a greased 9-inch tart pan with a removable bottom. Trim the corners and use them to fill in any empty spaces.
Do I have to use a tart pan?
I chose to use a tart pan for this puff pastry breakfast pizza because I wanted those puffy, flaky edges around the pizza. That being said you want make this recipe in a 9-inch deep-dish pie pan or even on a baking sheet.
Use a fork to prick the bottom.

Remove the pastry from the oven and use a metal spoon to flatten the center.
Spread cheese sauce over the puff pastry crust.
What kind of cheese sauce is on breakfast pizza?
I made an easy homemade cheddar cheese sauce to put on this puff pastry breakfast pizza. You can find my cheese sauce recipe here. Another option would be to use a store-bought cheese sauce. Or if you want to skip the cheese sauce, you can put a layer of shredded cheese down instead.
Next, add the scrambled eggs in an even layer.
Top the scrambled eggs with shredded cheddar cheese.
Sprinkle the cooked, crumbled bacon over the top.
What else can I add to this puff pastry breakfast pizza?
My family likes their breakfast pizzas pretty basic so I only add the eggs, cheese and bacon. But there are so many other toppings you can add to make it your own! Here are some suggestions:
- crumbled sausage
- diced ham
- onions
- spinach
- diced peppers
- mushrooms
- artichoke hearts
Bake at 400˚F for 12-15 minutes until the cheese is melted and the puff pastry crust is golden.
To remove the ring of the tart pan, center the bottom of the pan on a can and allow the ring to fall away from the breakfast pizza.
Can I make this ahead of time?
This puff pastry breakfast pizza is best when enjoyed after baking. But if you do want to reheat it, do so in the oven at 400˚F for 7-10 minutes. If you want to prepare this puff pastry ahead of time, here a couple of methods:
- One way to prepare ahead of time is to make all of the toppings, measure them out, and store them in the fridge. Then, when you want to bake the pizza, everything is ready to assemble.
- Another option is to prepare the puff pastry breakfast pizza up to the point of the final baking. Wrap it in plastic wrap and store it in the fridge overnight. In the morning, remove the plastic wrap and bake until the cheese is melted and the pastry is golden.
Could I use this recipe to make mini puff pastry breakfast pizzas?
That would be a fantastic idea! Use individual baking cups, like I when I made these mini apple crisps, instead of a tart pan and each mini puff pastry breakfast pizza can have the toppings each person wants.

Puff Pastry Breakfast Pizza
Ingredients
- 1 puff pastry sheet thawed
- 4 large eggs
- ¼ cup whole milk
- 1 tablespoon salted butter
- pinch black pepper
- ¼ cup cheese sauce
- ½ cup cooked, crumbled bacon (about 7 slices)
- ¾ cup shredded cheddar cheese
Instructions
- Preheat oven to 400˚F.
- Gently press the puff pastry sheet into a greased 9-inch tart pan (or use a 9-inch pie pan). Trim the corners and use them to fill any empty spaces along the sides of the pan. Prick the bottom with a fork. Bake at 400˚F for 10-12 minutes.
- While the pastry is baking, melt the butter in a non-stick skillet over medium heat. Beat the eggs with the milk and black pepper. Add the eggs and cook until just set. See How To Make Scrambled Eggs for detailed instructions.
- Remove the puff pastry from the oven and use a metal spoon to flatten the bottom.
- Spread the cheese sauce over the bottom. Top with the scrambled eggs. Sprinkle with shredded cheese and top with the crumbled bacon.
- Bake at 400˚F for 12-15 minutes, until the cheese is melted and the pastry is golden.

I made this but doubled and baked in a jellyroll pan. It turned out great. Next time I want to add some diced bell pepper as well. It was just what we needed on this lazy Sunday morning. I bet this was especially taste good on cool fall mornings as well.

It was great. I forgot to cook the pastry before I put my toppings on & it was fine. Instead of cheese sauce on the bottom I used Salsa & & topped with bacon, sausage & onion & jalapeño. Big hit.
