We took the classic tacos recipe from the back of the seasoning packet and made it even better by adding tomatoes, onions, and garlic! The meat absorbs the flavors while it slowly cooks in a crockpot.

Tacos are easy to make in a skillet, but ever since I first tried making crockpot tacos, it’s the only way I’ve made them!
I love that dinner is ready when I get done with work, and we can sit down to eat before going about our evening activities.
To make cleanup easier, I use a slow cooker liner, and to keep the smell out of our house, I put our crockpot in the garage while it is cooking!
How To Make Slow Cooker Tacos
Put the lean ground beef in a slow cooker and break it up into pieces.
Top the meat with taco seasoning, a can of drained Rotel diced tomatoes with green chilies, diced onions, and minced garlic. If you want the flavor without the tomato pieces, puree the Rotel first.
Stir until everything is combined and the seasonings are evenly distributed.
Cover and cook on low for 5-6 hours or on high for 3-4 hours or until fully cooked. The meat will be cooked into one large piece, so you’ll need to chop it up into whatever size pieces you want.
Storage Tips
- Cooling: Transfer the taco meat from the crock pot to smaller, shallow containers and place them in the fridge to cool.
- Refrigerator: Store the cooled taco meat in an airtight container in the fridge for 3-4 days.
- Freezer: Or in a freezer-safe airtight container in the freezer for 1-2 months.
