How To Make Tater Tot Breakfast Pizza
Tater Tot Crust
Line the bottom of a greased 12-inch cast iron skillet with tater tot crowns (flat, round tater tots, sometimes called potato crowns) and then line the sides of the pan. Bake the tater tots for 15 minutes.
Remove the tater tots from the oven and use a spatula to press down on the top and sides of the crust to smash the tater tots a bit.
Breakfast Pizza Toppings
Shredded Cheese
Top the crust with one cup of shredded cheddar cheese. The cheese will melt and help hold the crust together.
Scrambled Eggs
Heat the oil in a pan over medium heat. Whisk together the eggs and a sprinkle of salt and pepper. Cook the eggs until just set. They will cook more in the oven.
Spread the scrambled eggs over the tater tots in an even layer.
Sausage
Next, sprinkle with cooked, crumbled sausage. You could also use bacon bits or diced ham.
More Cheese
Add another layer of shredded cheddar cheese. Or you could top it with some homemade cheese sauce!
Bacon Bits
Finally, top the tater tot breakfast pizza with cooked bacon crumbles and bake for an additional 10 minutes.
Make Ahead and Storage
Make Ahead: To prepare the breakfast pizza ahead of time, assemble it up until the final baking. Allow the pan to cool, cover it, and place it in the fridge overnight. When ready to serve, remove from the fridge and bake at 425° for 25-30 minutes.
Storage: Allow the leftovers to cool and then store them in an airtight container in the fridge for 3-4 days or in the freezer for up to four weeks.

Couple of questions–can this be easily doubled, tripled? We have a holiday brunch/open house coming up (about 60 people) and would like to serve this as one of the 2 breakfast casseroles. Instead of scrambling the eggs beforehand, can you layer the tots, meat and cheese and then pour the eggs over and bake? Finally, can this be cooked in advance and then frozen? Thanks! Danielle

Sounds like a great idea! Yes, you can easily double or triple it and you can pour the eggs over the top. I would suggest whisking them with some milk first. Yes, you should be able to. My only concern would be the grease running off the pan so I might line the oven rack with foil to protect my oven. Best of luck!

I made this for dinner tonight for my husband and I, and it was AMAZING…What a great idea! Super easy and fun to make, and so yummy! We used ham instead and cooked it in with the eggs, and garnished at the end with some scallions. My husband is a food-snob, if you will, and he liked it so much he ate half of it himself! This is something I will definitely be making over and over again. This also would be the perfect breakfast dish for a crowd!
