How To Make Tater Tot Breakfast Pizza
Tater Tot Crust
Line the bottom of a greased 12-inch cast iron skillet with tater tot crowns (flat, round tater tots, sometimes called potato crowns) and then line the sides of the pan. Bake the tater tots for 15 minutes.
Remove the tater tots from the oven and use a spatula to press down on the top and sides of the crust to smash the tater tots a bit.
Breakfast Pizza Toppings
Shredded Cheese
Top the crust with one cup of shredded cheddar cheese. The cheese will melt and help hold the crust together.
Scrambled Eggs
Heat the oil in a pan over medium heat. Whisk together the eggs and a sprinkle of salt and pepper. Cook the eggs until just set. They will cook more in the oven.
Spread the scrambled eggs over the tater tots in an even layer.
Sausage
Next, sprinkle with cooked, crumbled sausage. You could also use bacon bits or diced ham.
More Cheese
Add another layer of shredded cheddar cheese. Or you could top it with some homemade cheese sauce!
Bacon Bits
Finally, top the tater tot breakfast pizza with cooked bacon crumbles and bake for an additional 10 minutes.
Make Ahead and Storage
Make Ahead: To prepare the breakfast pizza ahead of time, assemble it up until the final baking. Allow the pan to cool, cover it, and place it in the fridge overnight. When ready to serve, remove from the fridge and bake at 425° for 25-30 minutes.
Storage: Allow the leftovers to cool and then store them in an airtight container in the fridge for 3-4 days or in the freezer for up to four weeks.

We made this in our Dutch oven camping. It was awesome. We used diced ham, sausage crumbles and bacon bits. It cooked up beautifully at 350F for 20-25 minutes. We used the leftovers in breakfast burritos the next morning! Thanks for this awesome recipe!

Love this recipe! I premake this for our camping/ice fishing excursions. Make it to the point of putting back in the oven and freeze it, then bake it frozen 375 FOR 45 mins or so.

I made this today. I had regular tator tots so I partially cooked them then cut in half the long way. Easy to make and I think you could make this with veggies like tomato onion pepper and TVP crumbles if you don’t eat meat. Or change it up with spinach and crumbled feta and sun dried tomatoes on top. Lots of options with this recipe.

Love this pizza, so creative! To satisfy our desire for a spicy flavor I spread a layer of Philly Spicy Jalapeno Cream Cheese on the tator tots before adding the other toppings. Also cooked up scallions and mushrooms in the sausage! This was even better than any breakfast casserole we’ve ever made! Very moist, yet stable when served and lots of great flavor!

My husband and I LOVED this!! I used hashbrown squares in a square pan and it returned out great. Also put browned onions with the eggs then hit it with the broiler after baking to brown the cheese a little.Next time I make this I am going to make up two and freeze one for those mornings with little time. I made this just a few minutes ago and couldn’t wait for it to come out of the oven. I did however, change up the recipe. I didn’t have cheddar cheese and I didn’t have the tator rounds. I used regular tater tots with onions and just mashed them down really good, after that I place 4 slices of provolone cheese then put the eggs, sausage on it then I put mexican style queso quesadilla cheese and then put the bacon on top. OH MY WORD…..let’s just say I’ll be making this one again!!! Love love love it!

Hey Tonia! This looks amazing! Wanted to try and make this for a family Christmas brunch, but we have a bunch of non-cheese eaters/ dairy-free family. Can you make this without the cheese?

Hi Henrietta,
The cheese helps hold the tater tots together to form the “pizza crust”. So, if I were making this without cheese, I would whisk the eggs, salt and pepper, and pour the mixture over the tater tots without cooking the eggs first. Top with the meat and bake. As the eggs cook along with the tater tots, they will help bind it all together. I’m not sure how long it will take to bake this way so you’ll have to check on it. It will be more like an egg casserole.
