How To Make Two Ingredient Dough Pretzel Bites
Step One:
Put self-rising flour and plain, fat-free Greek yogurt in the bowl of a stand mixer with the dough hook attachment.
Step Two:
Mix at a low speed until combined.
Then, knead at a medium speed for about 3 minutes until a ball forms.
Step Three:
Turn the dough out onto a floured surface.
Sprinkle the top with flour, knead a couple of times, and form the dough into a ball.
Cut the dough ball into four wedges.
Step Four:
Roll each piece of dough into a long rope.
Cut the ropes into small segments.
Step Five:
Dissolve baking soda in boiling water.
Dip the dough segments into the baking soda mixture.
Step Six:
Place coated pretzel bites on a parchment covered baking sheet.
Step Seven:
Bake at 425˚F for 7-10 minutes, until golden brown.
Step Eight:
Brush pretzel bites with melted butter.
Step Nine:
Sprinkle with pretzel salt.

1) I can’t find self-rising flour. Can I make myself?
For one cup of self-rising flour, whisk together one cup of all-purpose flour, 1 1/2 teaspoons of baking powder and 1/4 teaspoon of salt but remember that results may vary!
2) What brand of plain, fat-free Greek yogurt do you recommend? Use whatever kind is available at your local grocery store. I’ve made two ingredient dough with Fage, Oikos, and the store brand and haven’t noticed a difference.
3) Do I have to use plain, fat-free, Greek yogurt for this recipe? No, but your results may vary. You can try using fat-free, full fat, 2% or 5% but may need to add a different amount of flour or make changes in the baking time.
4) What should I do if my dough is too sticky? Knead in a little more flour at a time until it is workable.
5) Can I make these pretzel bites without a stand mixer? Yes! Stir the self-rising flour and Greek yogurt together until combined. Turn it out onto a floured surface and knead until smooth.
6) How can I make these two ingredient dough pretzel nuggets WITHOUT a dough hook? Use the paddle attachment on your mixer to combine the self-rising flour and Greek yogurt. Turn it out onto a floured surface and knead until smooth.
7) What can I use INSTEAD of pretzel salt? You can use another coarse salt like kosher or sea salt.

Read the recipe ealier this week, and just made it. Nailed it! Do taste identical to soft pretzels, doubled the recipe, which equalled 2 full baking sheets. Dusted one sheet with salt other plain (hubby can’t have salt) Also don’t have a dough hook, used standard hand mixer at first just to blend ingredients then hand formed.
One small note, take caution when adding baking soda to boiling water is we used small pot and it boiled over at first.

I am on WW, my grand kids nor my husband is so I wanted to experiment with this two ingredient dough. I made the bread sticks however I split them down the middle and placed low fat hot dogs and made the 1 pt vegetarian chili to cover these with. Because they were only for me I did 1/3 of a cup of yogurt and 1/3 cup self rising flour. These were fabulous this way. We were in the Tuscon area last year and had a sonoran dog and my husband said hey these look like those. I will be using this recipe whenever I want bread of some sort.

I was skeptical that something this simple could be true, but I read the comments and decided to try it. I had regular whole milk yogurt on hand so that’s what I used, as well as making the self rising flour recipe you provided. It’s insane! They look and taste like pretzels. They’re fluffy and moist but have the firmness of a pretzel. Yum!! I had to add more flour as I was kneading and rolling and I used regular flour bc I didn’t make enough self rising, but it was easy to do and I was able to control the consistency of the dough. Has anyone tried it with an all purpose Gluten Free flour? If I do, should I add the ingredients listed to make as self rising flour?

While I haven’t tried it I’ve been cooking with gluten free flours for years. You definitely want to aim for a gf flour like “pillsbury all purpose gf flour”. It’s available everywhere including Walmart. It contains sourgum flour and xanthum gum, ingredients essential for your pretzels to stick together. Otherwise just gluten-free almond or coconut or rice flour might simply fall apart. Best of luck!

I think that most people use Greek yogurt because it has more protein and less sugar and carbs. Although I’ve never made this recipe with whole milk yogurt I think it would work just fine. I think you could also use a flavored yogurt if you were making something sweet with the dough. If you do give it a try, come back to let us know how it turned out!

You can add 1/2 tsp of salt to the dough without it changing the consistency. For this recipe, you can slowly knead in more flour until it is the consistency that you like.

The recipe is for pretzel bites made from two-ingredient dough (as opposed to “two-ingredient pretzel bites” which is NOT what this recipe is). The DOUGH is indeed made with two ingredients: self-rising flour and greek yogurt. If you don’t have the extra ingredients to turn that dough into pretzel bites like the recipe suggests, you can still make bread bites by shaping and cutting the two-ingredient dough into nuggets and baking them. They won’t have that pretzel taste but they will still be delicious. Best of luck!

The baking soda/water solution gives the pretzels a nice brown crust and the flavor of soft pretzels. You can skip it if you want but the pretzels will taste like dinner rolls instead of pretzels.

Bake the pretzel bites as the recipe instructs but don’t brush with butter or add the pretzel salt. Allow the pretzel bites to cool completely and then put them in an airtight container in the freezer.
When ready to use, remove from the freezer, bake at 425˚F for about 5 minutes until heated through. Brush with melted butter and sprinkle with pretzel salt.

You got a ball of goop when you mixed together the self-rising flour (1 cup plus 2 tablespoons) and plain Greek yogurt (1 cup)? I would suggest kneading in more self-rising flour, one tablespoon at a time until the dough reaches the right consistency. Let me know if you have any more questions!
