Step One:
Put self-rising flour and plain, fat-free Greek yogurt in the bowl of a stand mixer with the dough hook attachment.

Mix at a low speed until combined.
Then, knead at a medium speed for about 3 minutes until a ball forms.

Roll each piece of dough into a long rope.

Dissolve baking soda in boiling water.
Dip the dough segments into the baking soda mixture.

Place coated pretzel bites on a parchment covered baking sheet.
Step Seven:
Bake at 425˚F for 7-10 minutes, until golden brown.
Step Eight:
Brush pretzel bites with melted butter.
Step Nine:
Sprinkle with pretzel salt.

1) I can’t find self-rising flour. Can I make myself?
For one cup of self-rising flour, whisk together one cup of all-purpose flour, 1 1/2 teaspoons of baking powder and 1/4 teaspoon of salt but remember that results may vary!

I’m not sure what pretzels anyone who likes these has ever had before but the one or two out of the 40 plus I made tasted absolutely awful. Totally bland, even with the butter and salt added. I followed the directions to a T. I had to throw away all of them. Don’t bother.

I love the idea of the quick & easy pretzel bite, but I’ve made these twice now and the consistency when you use 1C self rising flour with 1C plain fat free Greek yogurt is just off. Both times I ended up putting between 3/4 and 1 C of additional flour into the dough because it was so wet/sticky with just 1C (+2T) of flour. I’m not sure how so many others rated this so high, which implies they made it and it worked! Don’t want to knock this since it could be user error (although, honestly, what is there to mess up?) but for now I’ll stick with the traditional yeast & let rise methods.

Yes you can use gluten free flour as long as you add the baking powder and salt. For one cup of self-rising flour, whisk together one cup of all-purpose (or in your case gluten free) flour, 1 1/2 teaspoons of baking powder and 1/4 teaspoon of salt
